So I wanted to make something kindof nice for dinner and have been curious about salmon steaks. I found some..they are pricey but no more than a nice steak and much healthier! It was around $8 for 2 steaks, which is still cheaper than going out to eat. Anyways, after browsing recipezaar for awhile I chose this recipe, and wow! For anyone who doesn't like fish, you've gotta try this! It works with any kind of salmon, it doesn't have to be a steak, but they were delish! I always seem to be baking goodies or breads and I have been trying to broaden my skills to healthier food/meals. And they actually looked pretty. Don't be fooled, it was soooo easy!
Broiled Salmon Steaks Recipe

SERVES 4
4 small salmon steaks (5 to 7 oz. each)
1/4 cup Worcestershire sauce
1 tablespoon Dijon mustard
1 dash Tabasco sauce (i used a pinch of red pepper flakes)
2 tablespoons minced parsley, for garnish
Rinse the salmon steaks and pat dry with paper towels.
In a shallow dish, combine the worcestershire sauce, mustard, tabasco, salt and pepper and stir with a fork to combine.
Set the salmon steaks in the dish and turn so that they are evenly coated with the mixture.
Let stand for 15 minutes.
Set the oven rack 3 to 4 inches below the element and preheat the broiler.
Line the broiler pan or baking sheet with a piece of foil and lightly oil the foil.
Using tongs, take the salmon steaks from the marinade, allowing excess to drip off, and arrange them on the foil with at least an inch between them; reserve the marinade.
Broil the salmon until lightly browned, 3 to 5 minutes.
Take the pan from the oven, turn the steaks and spoon on some of the reserved marinade.
Continue broiling until the salmon is just barely opaque through the thickest part (cut to test), 3 to 5 minutes longer.
Transfer the salmon steaks to individual plates, sprinkle with the minced parsley and serve.

Beautiful!! (I already think you're a good cook because we have yet to make an orange sponge cake like you do!!) But, forgive my ignorance, what color is opaque exactly? Lighter pink or more brownish? Or am I way off??
I'm so proud of you for expanding your horizons! (hehe) Looks and sounds yummy! I'll definitely have to try it. Because of you, I'm totally into David Archuleta(sp?), and JayC keeps making fun of me. But I still listen, cuz he's just so darn good. (I don't care that he's so young!:)

I think opaque is somewhere in between? Who knows!! I usually just see if its done by sticking a fork in the middle, if it flakes its done. :)
